Pumpkin Puree!!!

So, I know this is totally KK's territory, but I had to share my adventure in Pumpkin Puree today! Its no secret that I LOVE all thing pumpkin: Pie, Bread, Soup. But I have been talking my self out of buying the canned stuff this year just because I didn't have the extra money to waste on something like that when Grocery Shopping. That's when those uncarved pumpkins that have been sitting outside my door for a few weeks came to mind... So, here s my adventure in Pumpkin Puree! So easy and It's saved me a Bundle! :)

*Preheat oven to 325F

*Carve a Medium to Large Pumpkin in half, and carve out seeds and stringy insides.
( Save the seeds for baked pumpkin seeds! Mmmmm) Click HERE for Pumpkin Seed Recipe

*Place on Cookie Sheet and cook for One Hour

*After one Hour, Pull out of the oven and scoop out water that has collected in the Bowl-O-Pumpkin

* With a Medal spoon, scrape out the inside of the pumpkin and place into a strainer over a bowl. Careful not to go through the pumpkin skin on the bottom.
* Let Drain for 5-10 Minutes

*Scoop into a Blender of Food Processor and blend well in small batches. Repeat until all is smooth.

A single can of Pumpkin Puree is typically 16 oz, so separated my puree into Ziplock Freezer Bags in 2Cup increments and froze it away. All together I was able to render the equivalent of 12 Cans! Saving me well over $20 if I had bought them at the store! This was so fun and totally worth it! :)
